DCBeer Announces “Can’t Miss” Beer and Pairings Lists for SAVOR 2016

We hope your SAVOR Week is going great, ours is going *mumble mumble* *falls asleep spontaneously.* 

It's that time again, time for us to announce our annual "Can't Miss" SAVOR Lists for both beers and food pairings! We've done the work and profiled every single brewery and beer and pairing (with the exception of late addition The Lost Abbey, which we ran out of road on. Sorry, Tomme.) After discussing it and checking back through the profiles, we're pleased to present the lists below. They feature the beers that we feel absolutely should not be missed at SAVOR and the pairings that we think will work the best and be the most rewarding. Be sure to print these out and take them with you to the main event!

Big thanks to Jake Berg, Paul Josuns, and Bruce Webster for the assistance on the profiles and to Jake and Bruce for helping to put together the beer list below. It's a huge lift, so be sure to thank them in the comments.

Without further ado, here are the lists! Beer list is presented both by table and alphabetically by brewery. The food list is presented just in table. You can find the map for SAVOR here. The lists move from west to east (5th Street entrance to 4th Street).

  3. Table 5Big Storm Brewing Company – Helicity – Pilsner – 4.30% – Octopus gigante bean salad, tamarind, escarole "Gentle sea salt notes from the octopus act as a natural pairing for this helles. The escarole demonstrates that food can play the bitter role in a beer pairing."
  4. Table 6Odell Brewing Company – Odell IPA – India Pale Ale – 7.00% – Pumpernickel fried chicken, Fresno pepper jam "Aromas of citrus rind and pine combine with the Fresno pepper jam to showcase the flavor of the pumpernickel breading and the malty sweetness of the beer."

  7. Table 8 Victory Brewing Company – Kirsch Gose – Gose – 4.70% – Monkey bread, mascarpone, strawberries "By using a lighter dough for the bread, the soft notes of the gose are held on the palate and intensified by the clean taste of mascarpone and sweet strawberry."     
  8. Table 8Victory Brewing Company – Vital – India Pale Ale –  6.50% – Pheasant vol-au-vent, morels, English peas, cream "The pastry of the vol-au-vent matches the malt bill of the IPA, while the sweetness of the peas and the umami of the morel play with the hops."
  9. Supporter’s Circle Port City Brewing Company – Downright Pilsner – Pilsner – 4.80% – Pork schnitzel, lingonberry, red cabbage "Crisp, clean Pilsner flavors are enhanced by the crisp texture of the pork, while the carbonation and herbal hops play off the lingonberry sweetness."
  10. Supporter’s Circle Port City Brewing Company – COLOSSAL V – Old Ale – 9.80% – Vanilla custard, lemon & raisin tuile "The vanilla custard extends the experience on your palate. Delicate hints of lemon and raisin in the tuile bring out stone fruit flavors for a richer finish."           
  11. Supporter’s Circle Uinta Brewing Company – Cucumber Farmhouse – Farmhouse Ale – 6.20% – Juniper cured salmon, pressed cucumber, basil "Clean cured salmon is accented by juniper to provide a natural complement to the gin barrel aging. Look for the basil to balance the wood of the barrel."
  12. Supporter’s Circle Uinta Brewing Company – Birthday Suit – Sour/Wild Ale – 7.40% – Duck breast, radicchio, cherry saba "The duck breast makes way for the slight bitterness from the radicchio to pull out new reactions on the palate, while the cherry saba accents the sour."  
  13. Supporter’s Circle Hardywood Park Craft Brewery – Smoked Doppelbock – Smoked Doppelbock – 7.8% – Smoked bison short rib, juniper, rosemary, chili flake "Smoke on smoke pairings can be tricky. Use the juniper notes and the quick flash of heat from the chili flake to help clear the smoke off the palate."              
  14. Table 10 Bell's Brewery, Inc. – Bourbon Barrel Aged Expedition Stout – Barrel-Aged Imperial Stout – 10.50% – Whipped bone marrow, shallot & sherry marmalade, parsley "The rich flavor of the bone marrow pulls out the hidden dark fruit notes of the stout. "
  15. Table 13 Adroit Theory Brewing Company – Triptych – Tart Rambutan Saison – 8.80% – Apple brie tart, clove & honey syrup "Allow the carbonation of this saison to lift the gentle clove notes up to the roof of the mouth, giving the apple room to showcase the yeast profile."
  16. Table 13 Insight Brewing – Hell Chicken – Pale Ale – 5.50% – Shrimp & grits "We went a different route from the obvious and decided to pair Hell Chicken with shrimp. Look for the grits to add a creaminess to the malt."
  17. Table 15 Devil's Canyon Brewing Company – Full Boar – Scotch Ale – 7.40% – Smoked brisket, black pepper arancini, parmesan
  18. Table 15 Bear Republic Brewing Company – Heritage – Scottish Wee Heavy – 7.00% – Crispy pork shoulder, peach BBQ, smoked corn "Peaches pull out the barrel notes from the beer while the crispy pork exterior sweetens the roasted malt notes on the palate."
