When I first spoke with Matt Rose, founder and head brewer of Lorton, Virginia’s Forge Brew Works, he was in the middle of a brew day, and not just any brew day. The recipe was for an imperial oatmeal rye, a beast of a beer whose 140 pounds of grain per barrel made for backbreaking work. But Rose, a former NASA aerospace engineer, doesn’t let tricky situations overwhelm him.
