First Course
Grilled Scallops Parsley Purée, Grapefruit & Shallot Salad
Paired with Stillwater Stateside Saison – Stateside Saison pays homage to old world tradition while celebrating new world innovation. Naturally brewed with the finest European malts & fresh aromatic hops from the United States & New Zealand. It’s then fermented using a classic farmhouse ale yeast and bottle conditioned to enhance stability.

Second Course
Braised Rabbit Pot Pie
Paired with DC Brau Citizen – Belgian style Tripel using a traditional high gravity Abbey yeast strain that encourages the production of highly palatable ethanol notes supported by noble hop spiciness that is common to most Belgian Ales.

Third Course
Roasted Potato Gnocchi with Duck Confit Soft Poached Egg, Beech Mushrooms
Paired with DC Brau Thyme after Thyme – Belgian style winter ale, brewed with sweet and bitter orange peel, dark candi sugar and thyme.

Fourth Course
Roast Rose Veal Loin Rösti Potato, Tosso Ham, Veal Jus
Paired with Stillwater Saison Existent – A deep & dark Saison that is deceptively dry, braced by a firm yet smooth bitterness and accented with an earthy hop and mild roast aroma.

Dessert Course
Buttermilk Panna Cotta Salted Caramel Ice Cream
Paired with DC Brau & Stillwater NATAS – a Belgian Style Imperial Porter brewed with a traditional high gravity Abbey yeast. At first glance this brew is pitch black in the glass, with wafting aroma’s of burnt sugar and caramelized fruit. The mouthful is silky smooth with hints of cocoa.
