They use the captured CO2 to move beer around, and they sell the excess. In the wine industry, we use a lot of CO2 (and produce a lot during fermentation). I cannot argue with you about brewing at home . . . it is so satisfying to create something that others will enjoy. Certainly my friends haven’t exactly turned down the opportunity to sample my creations. They are always sure to bring back the empties to be refilled! The working class bar on my street only carried crappy corporate beer, but I asked the owner to stock the local micro brew and he did it with no problem.
